KUZHI PANIYARAM RECIPE/ INSTANT RAVA PANIYARAM

Paniyaram both Sweet and Savory is very popular in Southern India. Different types of Paniyarams are made with different ingredients. The most common paniyaram is made with fermented rice batter. As this is a time consuming process, I am going to share with you the recipe of Instant Kuzhi Paniyarams that get ready in just 30 minutes. You can serve these Instant Rava Paniyarams for breakfast or as a snack.

All you need is a "Appam patra" to make the Paniyarams and a few ingredients and a delicious snack is ready in no time. Kuzhi Paniyarams get cooked very fast and you can serve them with pudina chutney, tomato chutney or any other chutney of your choice. Here I served Kuzhi Paniyarams with Tomato Ketchup and the combination tasted good as well.

So, let's move on to the recipe of making Instant Rava Kuzhi Paniyaram

Ingredients

1 cup sooji/ semolina/ rava
1/2 cup curd
1/2 cup water or as required
2 tbsp oil
1/4 tsp mustard seeds
1/2 cup finely chopped onions
2 tbsp finely chopped coriander leaves
2 tbsp finely chopped curry leaves
1 tsp ginger paste
Salt to taste
1/2 tsp red chilli powder (or to taste)/ or green chillies finely sliced
1/4 tsp cooking soda
Oil for cooking

Method

  • Take Semolina in a bowl, add curd and 1/4 cup water and mix well such that there are no lumps.
  • You will get a thick batter. If necessary, add more water.
  • Cover and set aside for 15 to 20 minutes.
  • Meanwhile finely chop onions, curry leaves and coriander leaves and keep ready.
  • Heat oil in a pan, add mustard seeds and allow it to sputter.
  • Then add onions, curry leaves and saute for a few minutes till onions turn soft .
  • Next add ginger paste and saute for a minute till the raw smell goes.
  • Finally add salt, red chilli powder and coriander leaves. Mix well and switch off the gas. Allow this to cool down.
  • Then add this mix along with cooking soda to the Semolina batter and mix well. You will have a thick batter. (If the batter is very thick, you can add some more water)
  • Heat an Appam patra/ appe pan and add few drops of oil in the holes.
  • Pour the batter in the holes and close the lid.




  • Cook in low to medium flame for about 3 minutes or till the lower part turns golden.
  • Turn over the Paniyarams using a spoon or a stick and again cook covered for 2 to 3 minutes.


  • Open the lid and transfer the Kuzhi Paniyarams to a serving plate.
  • In the same way make the remaining Kuzhi Paniyarams.
  • Serve hot with Tomato Chutney or Ketchup or any other chutney of your choice.
