CARAMEL CUSTARD/ CARAMEL FLAN/ STEAMED EGG PUDDING WITH VIDEO

 


Hi friends, welcome back to my blog. Today I am going to share the recipe along with video of my favorite dessert that is also very easy to prepare and requires just 3 ingredients. Yes it is Caramel Custard or Caramel pudding made with Eggs. Caramel custard pudding is popular recipe at home as everyone loves it a lot. I usually serve this yummy dessert chilled after dinner.
I have shared the recipe of Caramel Custard with step by step pictures in my older post and today I am sharing the recipe of Caramel Custard pudding with video. Do try out the recipe. I am sure you and your family too would like this this really easy and mouth watering pudding.

I have used a 200 ml cup for measuring milk.


So, let's head on to the recipe of making Caramel Custard or Caramel flan or Egg pudding.

Serves: 4

Ingredients

3 eggs
2 cups of milk 
9 tbsp sugar

For caramel syrup

1 tbsp water
2 tbsp sugar 

Method

  • Boil 2 cups of milk in a pan, then reduce the heat and cook for some time till the milk reduces to half (i.e. 1 cup). 
  • Allow the milk to cool down completely.
  • Take the eggs in a wide bowl and beat well with a whisk or beater such that whites and yolks are well mixed.
  • Add sugar and continue whisking till the sugar dissolves.
  • Now add milk and mix well. Keep the mix ready. 
  • Now for caramelizing the sugar, take a aluminium pudding bowl and add 2 tbsp sugar and a tbsp of water, place it directly on the stove and heat in medium to low flame. 
  • The sugar will start melting and changing colour. Heat till it gets a golden colour. Remove immediately from the stove.
  • Allow it to cool down and then add the egg-milk-sugar mix to it.
  • Now take a steamer or Idli cooker and place a ring or stand in the middle. Add 2 or 3 glasses of water.
  • Place the pudding bowl at the centre on the stand. Close a lid over the bowl. Make sure that no moisture or water enters the pudding bowl. If necessary place some weight over the lid. 
  • Then close the lid of the steamer (or idly cooker) and cook for 30 to 40 minutes. 
  • Once done, wait for 2 to 3 minutes, open the lid, and check if the pudding is cooked. For this insert a skewer or toothpick, if the stick comes out clean the pudding is cooked. Otherwise, add some water to the steamer and steam for 10 more minutes. 
  • Once done allow it to cool, and then refrigerate it for at least 2 hours. For serving, pass a knife along the sides of the pudding bowl, place a plate on top and turn the bowl caramel side up. Cut it into slices and serve.

You can also use a pressure cooker or an electric rice cooker to steam the pudding. The only addition is to place a perforated plate at the bottom of the rice cooker. The procedure and cooking time is the same. The pudding can also be cooked in an oven.
