PULAO/ PILAF RECIPE/ HOW TO COOK BASIC PULAO




Hi friends, today I am sharing a very simple and basic recipe of making Pulao/ Pilaf. Pulao tastes great with Murgh Khurma/ Chicken curry. (You can click the link to get the recipe). Pulao or Bagare khaana can be made with oil or ghee. I often make Pulao using Basmati rice as it tastes awesome. But because of lockdown, I ran short of Basmati rice and made Pulao with regular raw rice. The Pulao was delicious. But if you have Basmati rice in your pantry, do make this Pulao with Basmati rice as it tastes a lot better.

Ingredients

4 tbsp oil
2 onions thinly sliced
1 tsp garlic paste
1 tsp ginger paste
1/2 cup coriander and mint leaves
1 green chilli
3 cups rice
6 cups water
2 tsp salt (or to taste)
2 tbsp curd 

Method

  • Wash and soak rice in water for at least half an hour.
  • Take curd in a bowl. Mix well with a spoon or whisk so that there are no lumps.
  • Heat oil in a pressure cooker and add the onions. Saute till the onions turn dark brown.
  • Transfer 1/2 the fried onions to a plate. We will add them at the end.
  • Now add garlic and ginger paste and saute in low flame for a minute.
  • Then add curd, green chilli, coriander and mint leaves and mix well.
  • Add water and salt and bring to a boil.
  • When water starts boiling, reduce flame to low.
  • Drain away the excess water from the rice and add the rice to the boiling water.
  • Mix well, increase flame to high and close the lid of the pressure cooker.
  • Pressure cook for 2 or 3 whistles.
  • After the steam has come out, open the lid and transfer the Pulao to a serving bowl.
  • Garnish with the fried onions, coriander and mint leaves and serve hot with Murgh Khurma/ Chicken curry

Note:

For making this Pulao with Basmati rice, take 5 cups water for 3 cups Basmati rice and cook for 1 or 2 whistles. All other ingredients are the same.
