CHICKEN AND VEG PULAO

 


Hi friends, today I am going to share the recipe of one of my family's favourite dish. This is a one pot pulao that I turn to when I wish to make a rice dish that is flavorful, quick and healthy.

Since I add chicken pieces to the pulao along with vegetables like carrot, potato, peas and beans, the taste of the pulao comes out awesome. You can serve this Chicken and Veg pulao to kids and also pack it in their lunch boxes, as it is mildly spiced and tasty.

Let's move on to the recipe of making Chicken and veg pulao.

Ingredients 

2 cups Basmati rice
150 gms Chicken cut into pieces (with bone or boneless as per your choice)
1 potato cut into small pieces
2 carrots cut into small pieces
8 beans finely chopped
1/4 cup shelled peas
4 tbsp oil
1/2 tsp cumin seeds
1 onion finely sliced 
2 tsp ginger garlic paste
2 cardamoms
2 cinnamon
2 cloves
2 tomatoes sliced
2 green chillies (optional)
Handful of coriander and mint leaves
2 tbsp curd
1 tsp lemon juice
3 cups water
1 and 1/4 tsp salt (or to taste)
1/4 tsp pepper powder (or to taste)

Method

  • Wash and soak the Basmati rice in water.
  • Heat oil in a pressure cooker, add cumin seeds, cardamoms, cinnamon sticks, cloves and onions.
  • Saute for sometime till onions turn golden.
  • Then add ginger garlic paste and saute till the raw smell goes.
  • Next add tomatoes, green chillies, coriander and mint leaves and mix well.
  • Cook for a couple of minutes in low flame till oil starts separating.
  • Next add curd, salt, and pepper powder and mix well.
  • Finally add the vegetables along with the chicken pieces and saute for a minute.
  • Add water and lemon juice and bring to a boil.
  • When water starts boiling, reduce heat, strain away water from the Basmati rice and add the rice to the cooker.
  • Close the lid of the pressure cooker and pressure cook for 2 whistles in high flame.
  • Switch off the gas and move the cooker to another burner.
  • Allow the steam to escape and open the lid.
  • Transfer the Chicken and Vegetable pulao to a serving bowl and serve hot with Afghani Chicken gravy or Chicken Manchurian gravy.
