Hi friends, welcome back to my blog. Today, I am going to share the recipe and method of making a Colourful Vanilla sponge cake at home. I made this colourful and spongy vanilla cake some days back as my daughter had been asking me to make a cake with 4 different colors in a single cake.. After brainstorming for an idea on how to incorporate 4 colours in one cake , I came up with this beautiful and colorful cake... She was overjoyed! and so was I :)
This cake looks so colorful and beautiful that you will be tempted to make it right away. I have also not used an oven to make this Vanilla sponge cake. I baked this cake in my pressure cooker and the cake came out soft and delicious. I have modified my recipe of Hot milk sponge cake to make this colorful Vanilla sponge cake. I am also sharing step by step pictures of making Colorful Vanilla Sponge cake below. Do try out the recipe of making this Colorful Vanilla Sponge cake. I am sure it will become a new favorite among kids.
You can serve this Colorful Vanilla sponge cake as it is with tea or coffee in the evenings. This Vanilla sponge cake is also an ideal cake that you can pack in your kid's snack box. Since this Vanilla sponge cake is made with eggs, it is firm and you can cut it into two to make layer cakes and decorate the Colorful Hot milk sponge cake with butter cream, chocolate or any other frosting of your choice.
I have used a 180 ml cup for measuring All purpose flour, sugar and milk. I made one cake using this recipe of Colorful Hot milk sponge cake. You can increase the proportion of ingredients to make a larger cake. This Colorful sponge cake is also an ideal cake you can make for Birthday parties and Special occasions. Kids would be for a treat when they would see multiple colors in a single layer of cake.

Let's head on to the recipe of making Colorful Vanilla sponge cake at home..
Ingredients required for making the Colorful vanilla sponge cake 1 and 1/2 cups minus 2 tbsp All purpose flour/ maida (approx 125 gms) 1 tsp baking powder 2 eggs 3/4 cup sugar 1 tsp vanilla essence 50 gms butter 1/2 cup milk 4 food colors
To prepare the cake pan To prepare the cake tin so that we can assemble batter of 4 different colors, we will be making Partitions using cardboard or carton box.

  • Now cover each cardboard piece with aluminium foil or cling wrap and keep ready.
  • Take your cake tin and grease it with oil.
  • You can place a butter paper inside or if you do not have one, you can cut a normal A4 paper and place it inside the pan. Just grease it with oil on top.
  • Assemble the prepared partitions on the cake tin and keep ready.For this, take a clean cardboard or carton box, measure the diameter of your cake tin and cut the card such that the card divides your cake tin into 2. Similarly cut 2 more pieces as shown so that your cake pan is divided into 4 parts.

To prepare the Colorful sponge cake batter
  • First to prepare the oven setup, take a pressure cooker, add 1 cup salt and spread evenly.
  • Place a ring inside and close the pressure cooker lid without gasket and whistle.
  • Heat in low to medium flame for 10 minutes.
  • Sieve All purpose flour and baking powder twice and keep ready.

  • Take sugar in a blended and grind to a fine powder. Keep ready.

  • Take milk and butter in a pan and heat in low flame till the butter dissolves. Keep ready.

  • Beat eggs in a bowl, add sugar and beat well till the color of the egg mix changes to pale yellow.

  • Add the milk- butter mix to the egg- sugar mix and beat well.
  • Add vanilla essence and mix.
  • Now add the dry ingredients little by little and mix gently till there are no lumps.

  • When your cake batter is ready, divide it into 4 equal size bowls.

  • Add different food colours to each bowl and mix well. I made pink, orange, yellow and green color Sponge cake batters.

  • Now we can pour the prepared Colorful sponge cake batters in each section of the cake pan.

  • Now gently take out the partitions and tap the cake pan so that there are no air bubbles.
  • Place the cake pan inside the pressure cooker that has been heating and close the lid.

  • Cook in medium flame for 10 minutes and in low flame 15 to 20 minutes. Open the lid and insert a toothpick. If it comes out clean, the colorful sponge cake is cooked. If not, cook for a few more minutes.

  • To bake in an oven, preheat the oven at 180 degree C for 10 minutes.
  • Place the cake pan in the central rack of the oven with upper and lower rods “On”.
  • Bake at the same temperature for 30 to 35 minutes or till the toothpick inserted comes out clean.
  • Once ready, allow the Colorful sponge cake to cool down completely, run a knife around the edges, and invert the cake.

  • You can add any frosting of your choice or cut and serve the Colorful sponge cake as it is.
