KHEEMA SUTRIYAN/ MINCED MEAT SUTRIYAN/THAKKADI RECIPE + VIDEO




Hi friends, welcome back to my blog. Today I am sharing the recipe of Kheema Sutriyan. Sutriyan or Rice flour pasta is also called Thakkadi  in some places. I have already posted the recipe of Chicken Sutriyan in one of my earlier posts and here I am sharing recipe of making delicious Kheema/ minced meat Sutriyan.

Even though making handmade pastas looks laborious, it is worth the effort and you can also take help from your kids and family members. This way we bond with each other while preparing Sutriyan. This has been a family tradition and I remember making Sutriyan as a child when my mom used to make it. Now my daughter helps me in making Sutriyan.

Ingredients required for making Kheema Sutriyan

1 cup = 180 ml/ normal tea cup
For making the dough

4 cups rice flour
4 cups water
1 tsp salt

For kneading the dough

Water as needed
1/2 cup oil

For cooking the Sutriyan

12 cups water
1 tsp salt

For the khurma/ chicken gravy

4 tbsp oil
1 large onion thinly sliced
2 cinnamon, 2 cardamoms, 2 cloves
3 tbsp ginger garlic paste
2 tsp red chilli powder
1 and 1/4 tsp salt
5 tomatoes pureed
1 tbsp curd
2 tbsp coconut paste
Juice of half a lemon
A handful of coriander and mint leaves
1 cup minced meat
2 cups water

Method

  • Boil 4 cups water in a pan.
  • Take rice flour and salt in a bowl and add the boiling water.
  • Mix well with a spoon and allow this to cool down.
  • Meanwhile we will prepare the gravy/ khurma. For this, heat oil in a pressure cooker, and onions, cardamoms, cloves and cinnamons.
  • Cook till the onions turn golden and then add ginger garlic paste. Saute till the raw smell goes.
  • Add red chilli powder, salt and cook for a minute.
  • Add the tomato puree and cook for about 5 minutes till oil starts separating.
  • Add curd and coconut paste and mix well.
  • Now add minced meat/kheema along with coriander leaves, mint leaves, lemon juice and 2 cups water and mix well.
  • Close the lid of the pressure cooker and cook for 4 to 6 whistles. We will add the khurma in the end.
  • When the dough is slightly warm, sprinkle water and knead to form a soft and firm dough. Add oil and knead for a couple of minutes.



  • Divide the dough into 8 balls. 
  • From each dough ball make small balls as shown.



  • Take a small ball on your left palm.


  • And using your middle finger of your right hand, form an elongated shape as shown. It should be thick in the middle and thin on both ends.


  • Flatten it with the middle finger. This is one rice pasta.


  • In the same way make the remaining rice flour pastas.


  • Boil 12 cups water in a large pan/ vessel and add a tsp of salt.
  • When it starts boiling, add the pasta made from 2 dough balls. Do not mix otherwise the pasta will break.
  • While the pasta is getting cooked in water, make the second set of pasta ready.
  • After 8 minutes, give a stir to the pasta already cooking in water and only then add the second set of pasta.
  • In the same way, cook the third set and fourth set of pasta.
  • Let it cook for 8 minutes, then give a stir and add the khurma to this.
  • Gently mix.
  • Place a tava and place this vessel on top.
  • Close a lid and cook for about 10 minutes in low flame.
  • Switch off the gas, transfer to a serving dish and garnish with coriander leaves.
  • Delicious sutriyan is ready to be served.
