HOW TO MAKE WHOLE TANDOORI CHICKEN IN AN OTG OVEN


Hi friends, welcome back to my blog. Today I am sharing the recipe of Whole Tandoori Chicken that I cooked recently. I used an OTG oven to grill this Tandoori Chicken. The Chicken came out delicious, perfectly cooked and flavorful.

Here I have used several ingredients like yogurt, ginger garlic paste, spice powders, etc. to marinate the chicken. I marinated the chicken for 24 hours in Refrigerator, but if you are in a hurry, try to marinate the chicken for at least 4 hours for the Chicken to absorb all the flavors from the marinade.

For making this Whole Tandoori Chicken, I have used 1 kg Chicken and cleaned the inside and outside well with water. After that I dabbed it well with a clean kitchen towel and made cuts using a knife on the chicken so that the marinade reaches well inside the Chicken.

I have used the Rotisserie rod that comes with the OTG to grill this chicken. It took exactly 1 hour and 15 minutes to get a perfectly cooked Tandoori Chicken in my oven. The time may vary depending on your oven and the climatic conditions of the place you live in. But generally Tandoori chicken takes an hour to cook. You can increase the time and stop when you see slight black patches on the chicken.

Also, don't forget to place a sheet of Aluminum foil on a baking tray and place in the lower rack of the oven. This step will help in preventing the juices from the Tandoori chicken in falling on the heating rods at the bottom of the oven. Placing Aluminum foil will save the baking tray from getting burnt and help in easy cleaning.

Tandoori Chicken is usually served with Green Chutney or Mayonnaise or Garlic dip. Here I served Tandoori Chicken for lunch with Mutton Dum Biryani, Salad and Onion Raita, so I have skipped making the dips. If you are serving Tandoori Chicken for dinner or as a starter, do serve it with the dips and a vegetable salad.




So, now let's move on to the recipe of making Whole Tandoori Chicken at home in an OTG oven.

Ingredients

1 kg whole Chicken
1/4 cup curd/ yogurt
2 tbsp ginger garlic paste
1 tbsp soya sauce
1 tbsp tomato sauce
1 tsp pepper powder
1 and 1/2 tsp salt (or to taste)
2 tsp red chilli/paprika powder
1 tbsp tandoori masala (optional)
1 tsp coriander powder
1 tsp garam masala powder
1/2 tsp crushed dry fenugreek leaves/ kasuri methi
2 tbsp corn flour for binding
2 tbsp oil
Some butter for brushing on top (optional)

Method

  • Clean and wash the Whole chicken and make cuts on it.
  • Dab it with a clean kitchen towel to remove all the moisture and water.
  • Take a large bowl, add yogurt, oil, ginger garlic paste, tomato sauce, soya sauce, pepper, paprika, tandoori masala, coriander and garam masala powders, salt, corn flour and crushed fenugreek leaves and mix well to make a thick paste.
  • Take the whole chicken and apply this marinade all around it. Make sure that the inside and outside of the chicken is well covered with the marinade.
  • Close a lid and place the chicken to marinate in a refrigerator for 24 hours.
  • Take out the chicken and place it outside at least 1 hour before grilling it in the oven.
  • Now preheat the oven at 200 degree C for 10 minutes.
  • Take a baking tray and place a sheet of aluminum foil on it. This will collect all the juices from the chicken and save the baking tray from getting burnt.
  • Then take the whole chicken and tie it with a thick thread all around so that the legs and wings do not fall while it rotates in the oven.
  • Now take the rotisserie rod and insert it mid way through the chicken and adjust the claws and screws  so that the rod holds the chicken tight.
  • Now carefully, using a handle, place the rod with chicken inside the oven and set the Function knob to both upper and lower heating with rotisserie function and set the time to 1 hour.
  • The rod will rotate and so the chicken will also rotate and get cooked evenly on all sides.
  • Grill the chicken for 1 hour and then if needed grill it for some more time till you get black patches on the chicken.
  • Once done, take the chicken out using the handle and brush it with some butter when it still hot. This is optional and you can omit this step if you are health conscious. 
  • Then carefully remove the Rotisserie rod, screws and claws and cut off the threads.
  • Serve the Tandoori chicken with Onion rings, Salad, Mayonnaise, Garlic dip or Green chutney.
