SOYA CHUNKS AND VEGETABLE PULAO



Soya Chunks and Vegetable pulao is a quick, healthy and one pot lunch dish that gets cooked in less than 30 minutes. This pulao is flavorful, mildly spiced and a perfect dish that you can cook when you are short of time and yet wish to make something nutritious and delicious.

Soya chunks and vegetable pulao is an ideal dish that can be packed in our and our kid's lunch boxes. This pulao can be served with Kadai paneerKung Pao chicken or any other side dish of your voice. This Soya chunks and vegetable pulao also tastes best with onion raita and boiled eggs.

1 cup = 180 ml
Ingredients

1 and 1/2 cups basmati rice
2 and 1/4 cup water
2 tbsp oil
1 onion sliced
2 cardamoms,  2 cinnamons, 2 cloves, 1 star anise
1 tsp ginger garlic paste
1 and 1/2 tsp red chilli powder
1 and 1/2 tsp coriander powder
Pinch of turmeric
1 tsp salt (or to taste)
2 tomatoes finely chopped
2 potatoes cut into medium pieces
6 beans finely sliced
1 carrot finely chopped
1/4 cup shelled green peas
2 cups soya chunks
1 tsp garam masala powder
Handful of coriander and mint leaves chopped

Method

  • Take 5 cups water in a pan and boil the Soya chunks for about 5 minutes.
  • Switch off gas and let it stay in hot water for about 15 minutes.
  • Next wash well with water and squeeze out the excess water.
  • Keep the soya chunks ready.
  • Heat oil in a pressure cooker, add the spices and onions and sauté till it turns golden
  • Next add ginger garlic paste and sauté till the raw smell goes.
  • Add red chilli powder, coriander powder, turmeric powder and salt and mix well.
  • Add the tomatoes and cook for a few minutes till the tomatoes turn soft.
  • Now add the veggies and soya chunks and mix well.
  • Cook the veggies with the masalas in low flame while stirring for about 5 minutes.
  • Finally add water, garam masala powder, coriander and mint leaves and bring to a boil.
  • Drain the excess water from the basmati rice and add the rice to the cooker.
  • Close the lid and pressure cook for 2 whistles.
  • Allow the steam to come out and transfer to a serving bowl.
  • Delicious and healthy Soya chunks and vegetable pulao is ready to be served.
