JAM COOKIES/ HOW TO MAKE EGG LESS JAM COOKIES AT HOME



Jam cookies are one of the most simplest and easiest cookies to bake. They are often made using flour, butter, sugar and eggs. But I have not used any eggs in this recipe. The Jam cookies get baked in just 15 minutes and taste delicious. This recipe makes approximately 8 Jam cookies. You can increase the proportions of ingredients to make more cookies.

RAGI COOKIES/ FINGER MILLET COOKIES




Cookies are a great tea time snacks. I have shared several recipes of cookies and biscuits in my blog like mini butter cookies, whole wheat cookies,chocolate cookies, chocolate chip biscuits, nan khatai and chocolate chip cookies. And in today's post, I will be sharing a healthy and delicious recipe of cookie made with Finger millet flour/ Ragi. These Ragi cookies are crunchy, healthy and delicious.

EASY CHOCOLATE COOKIES




This is a quick and easy recipe of cookie which you can assemble and bake in less than 40 minutes. The recipe needs very few ingredients and the cookies taste delicious.

NAN KHATAI



Nan khatai is an crunchy and delicious biscuit often made using all purpose flour (maida) and butter. But there are several varieties of nan khatai made using different ingredients. This is an eggless recipe of nan khatai made with all purpose flour, semolina and gram flour and has been adapted from Manjulas Kitchen. This recipe yields 24 to 26 nan khatais.

WHOLE WHEAT BUTTER COOKIES (EGGLESS)




We usually prepare butter cookies using all purpose flour, but to make them more wholesome, I substituted all purpose flour with Whole wheat flour. And the result was simply fantastic. The cookies tasted crunchy and delicious. Since these cookies are egg less, vegetarians can also try this. This recipe yields nearly 2 dozen cookies.

MINI BUTTER COOKIES (EGGLESS)




Butter cookies are one of the most simplest and easiest cookies to bake. Cookies are basically small baked treats which are usually sweet. They are often made using flour, butter, sugar and eggs. But this is an eggless version and i am sure you will not miss it as they are so tasty. Just knead together these few ingredients, pinch small balls, flatten and place it in the tray and then into the oven and voila, sweet smelling and delicious cookies are done. This recipe makes approximately 14 mini cookies. You can also make normal sized cookies and increase the proportions to make more cookies.

CHOCOLATE CHIP BISCUITS






This is a very simple and easy to make biscuit recipe. I came across this recipe at Menu Rani Chellam’s cookery show where she made Hyderabadi or dry fruit biscuits. The original recipe called for tutti frutti or cherries but I replaced it with chocolate chips and cashews. You can either use chocolate chips or chop the regular chocolate into small pieces.

LOW FAT OAT DATE BISCUITS




These oat date biscuits are very tasty and healthy as they are made with oats and dates and require very little amount of oil or butter.

Ingredients

¾ cup Oats powdered
5 to 6 black dates finely chopped
¼ cup wheat flour
¼ cup powdered sugar
1 tsp vanilla essence
1 tbsp oil or butter
Milk

Method

In a bowl, add powdered oats, wheat flour and sugar and mix well. Then add oil or butter, vanilla essence and 1 tbsp milk. Knead well to form a smooth dough. Add a few tsp of milk if necessary. Do not add too much milk as the dough will become sticky. When the dough is ready, divide it into small balls and gently flatten it. Place it in a greased baking tray and bake at 140 degree Celsius for 15 to 20 minutes or till the lower part turns brown. (If you are making it for the first time, keep a close watch over it.) Allow it to cool. Oats date biscuits are ready to be eaten.

CHOCOLATE BUTTER COOKIES




These mouth watering cookies taste similar to the coffee day cookies. This is one cookie recipe which you would like to try again and again.

Ingredients

½ cup maida (All purpose flour)
1/3 cup butter
2 tbsp sugar
30 gms chocolate bar (Cadburys or any other)
1 tbsp rice flour
½ tsp vanilla essence
Milk( if necessary)

Method

First grind the sugar until finely powdered. Remove on a bowl, add butter and vanilla essence and mix well. Then add rice flour and maida. Knead to form a smooth dough. (Add milk little by little if necessary. Too much milk will result in a sticky dough). Then take a chocolate bar cut it into pieces and mix well with the dough. Preheat the oven at 160 degree Celsius for 10 minutes. Meanwhile grease and slightly flour a baking tray, take small balls from the dough, flatten them and place on the baking tray. Bake for about 20 minutes or until the lower part turns slightly brown and upper part is cooked. Remove the baking tray from the oven and allow it to cool. Once cooled chocolate butter cookies are ready to be eaten.
