Hi all, Today I am sharing recipe of making Cheese Balls. These cheesy balls are soft on the inside and crispy outside and are a perfect snack that you can make with tea in the evenings. These Cheese balls are also an ideal snack for Iftar (as Ramadan is round the corner) as they do not take much time to prepare.

POTATO FRITTERS/ ALOO KA CUTLET

POTATO STIR FRY





This is a very simple stir fry recipe that can be made quickly and requires very few ingredients. The stir fry can be stuffed in chapathis to make rolls or can be served as a side dish with rice and dal.

VEGETABLE BREAD ROLLS





Bread rolls can be prepared in several different ways. They can be stuffed with vegetable or meat filling and stir fried or deep fried in oil. In this recipe the rolls have vegetable stuffing and have been deep fried in oil. Fried bread rolls taste much better than the stir fried ones :) You can serve these hot bread rolls with tomato ketchup or green chutney.

Potato Beetroot pulao is a healthy and delicious pulao that can be cooked in less than 20 minutes. Potatoes and beetroot add a wonderful taste and flavour to the pulao. This dish can be served with any Chicken or paneer gravy of your choice.

BROCCOLI POTATO STIR FRY




Broccoli is rich in Vitamin C, Vitamin A and dietary fibre. It is said that it also plays a role in reducing the risk of cancer and heart diseases. Hence this healthy and nutritious vegetable has started gaining prominence in India. In this stir fry recipe broccoli is mixed with boiled potatoes. You can serve this as a side dish with rice and curry or with roti, chapathi or Naan.

BAKED VEGETABLES WITH PASTA





This is a very simple and easy to cook delicacy filled with vegetables, pasta and cheese. White sauce has been added to enhance its flavour and taste. This can be served as a main dish with soup as an accompaniment.

ALOO METHI BIRYANI





This is a new variety of biryani that we tried recently. The addition of methi gives a nice flavour to the biryani. It is easy to cook and gets done in about half an hour. We have cooked the rice and khurma separately and then combined in the final stage.

SPICY POTATO PEAS CUTLET





Cutlets are perfect snack on any day. They are usually prepared using potato as a base and other vegetables are added to enhance its taste and flavour. Here we have made cutlets using potatoes and peas and egg has been used for the outer coating. The egg binds the cutlet well and prevents the potato peas mixture from coming out while deep frying. Even though we have deep fried the cutlets, you can also shallow fry or stir fry to reduce the oil content.

ALOO MASALA





Potato/ Aloo masala is a very popular dish in South India. It is best served with dosas as masala dosa or with pooris. Sambar and coconut chutney are the usual accompaniments.

ALOO PARATHA




Aloo Parathas are one of my family's favorite dishes. We can serve Aloo Parathas for breakfast or dinner or can also pack in our lunch boxes. Aloo parathas need no side dishes or gravy and can be served as it is or with Onion raita. You can make these yummy parathas in just 45 minutes.


CORN VEGETABLE RICE





This is a perfect lunch box recipe packed with vegetables and corn. The presence of corn adds that extra bite to the rice making it more flavourful and delicious. If the veggies are cut and ready then it takes just about 15 minutes to cook. This is the easiest way of eating vegetables which you don’t normally like to eat.


Ingredients

1 cup corn

1 beetroot

1 potato

1 carrot

½ cup peas

3 tomatoes

2 onions

1 ½ tsp red chilli powder

1 tsp garam masala powder

1 ½ tsp salt

4 to 5 tbsp oil

1 cardamom, 1 cinnamon

2 cups rice washed and soaked in water for ½ an hour

4 cups water

3 tbsp coriander leaves

Method

First chop the vegetables, tomatoes and onions into small pieces and set aside. Then heat oil in a pressure cooker, add onions, cardamom and cinnamon and sauté till onions turn golden. Then add garlic paste, ginger paste, chopped tomatoes, coriander leaves, red chilli powder, garam masala and salt. Mix well and cook till oil starts separating. Then add the vegetables and corn. Cook for about 2 minutes. Then add the drained rice, cook for a minute, then add water, close the lid and pressure cook for 10 minutes or up to 3 whistles. Serve hot. It can be had with meat balls, shami, cutlets or sauce.
