HOW TO MAKE WHOLE TANDOORI CHICKEN IN AN OTG OVEN


Hi friends, welcome back to my blog. Today I am sharing the recipe of Whole Tandoori Chicken that I cooked recently. I used an OTG oven to grill this Tandoori Chicken. The Chicken came out delicious, perfectly cooked and flavorful.

CHICKEN YAKHNI PULAO/ HOW TO MAKE CHICKEN YAKHNI PULAO AT HOME




Yakhni Pulao or Chicken Yakhni Pulao is a flavourful, mildly spiced and delicious Chicken Rice recipe from Kashmir. Here the chicken is boiled in water and the chicken stock or Yakhni is used to cook the Rice along with spices. I made this  Chicken Yakhni Pulao for Iftar and it came out so good. You can also make this Chicken Yakhni Pulao for Lunch or dinner and serve with Onion Raita, Vegetable Khurma or even Ketchup. 

PRAWN BIRIYANI RECIPE WITH VIDEO





Prawn Biriyani is a delicious biriyani bursting with flavours. I have shared a recipe of making prawn biryani at home in one of my earlier posts where we cook rice and khurma separately and create a dum for the biryani. But today, I am going to share an easy and short cut method of making prawn biryani in just 30 minutes. Here I have cooked the biriyani in a pressure cooker and have also added rice directly to the biryani gravy. Hence we don't have to cook rice separately. The biryani came out delicious. You can serve this biryani with onion raita, chicken 65 and khatte baingan.

PRESSURE COOKER VEGETABLE BIRYANI WITH PICTORIAL




Biryani is one of the most sought after rice delicacies in India and the world. It is so flavourful and delicious that it is made at least once a week in my home. I have shared several different recipes of Biryani like Muslim mutton biryani, chicken biryani, white chicken biryani, etc but somehow I forgot to post one of my most favourite biryani and that is Vegetable Biryani. It has all the goodness of veggies (and you can make your children eat them without any fuss) and gets cooked really fast as I use a pressure cooker to make this delicious Vegetable Biryani.

MOONG DAL KHICHDI





Moong dal khichdi is a healthy, nutritious and comfort food that is often served for lunch with Toor dal sambar, Chicken Khurma/ Korma or barbooth. At home we usually serve Moong dal Khichdi with Ande ka Barbooth (Eggs in tomato gravy) and mint chutney. The combination tastes delicious and is definitely a must try lunch recipe at your home. SUTRIYAN/ RICE FLOUR PASTA IN CHICKEN GRAVY - WITH STEP BY STEP PICTURES




I have grown up eating Mutton and Chicken Sutriyan right from my childhood. Just the very name of the dish brings back fond memories. My mother and grand mother made delicious Sutriyan at home. So, during weekends or summer holidays, when we kids were free, we would help our mom in making the home made pasta that is added to the Yakhni/ Chicken or Mutton gravy while preparing Sutriyan.

MUTTON BIRYANI




Biryani is one of the most popular dishes in India and abroad. Festivals and feasts are complete only when a plate of piping hot Mutton biryani is served with Khatte baingan, chicken 65 and onion raita. This is my mother's Mutton biryani recipe and the biryani tastes fantastic.

MAIDA DOSA / MAIDE KA CHEELA




This is a quick and easy breakfast recipe that requires very few ingredients. The dosa tastes best when served hot with Khurma or Sambar.

ONION PARATHA






Onion is a quintessential ingredient used in Indian cooking to prepare curries, sauces, chutneys, rice varieties, etc. Today's recipe is a simple recipe of paratha with onion as the main ingredient. This recipe does not require many ingredients or hours of preparation and hence is a perfect recipe you can turn to when you have little time and yet wish to have a change from your regular routine.

MAC N CHEESE




Macaroni and cheese (Mac N Cheese) is a very simple and easy to cook dish made from elbow macaroni and cheese. Though it is often baked as a casserole, it can also be cooked on stove top. Most recipes use all purpose flour to prepare the white sauce, but this recipe has no all purpose flour, but yet is cheesy and delicious. The dish gets done in a span of 15 minutes which includes the time taken for cooking the macaroni. Hence this is one quick meal ideal for those wishing for a cheesy delicacy on a cold winter day.

EGG SAMOSA



Samosa is one of the most delicious and popular snacks in India. It is often stuffed with Potato/ Aloo  or Onions and is usually triangular in shape. Today's recipe is a slightly different type of samosa. Here the samosa covering has several layers and is filled with delicious egg filling. As a result the samosa is crunchy on the exterior and soft inside. The method of making the samosa is similar to the one we used to prepare Kheema samosa, but for a change we made it rectangular. Both Kheema samosas and egg samosas are often made by my mom for iftars during Ramadan and on other times for Sunday breakfast.

This recipe makes 20 to 25 samosas. You can adjust the quantity of ingredients according to your requirements.

SAMBAR SADAM IN A PRESSURE COOKER





Sambar sadam/ rice is a healthy and delicious rice preparation made using lentils, vegetables and spices. It is a common lunch variety in several south Indian homes and is often served with poriyal and papad. Since Sambar sadam usually has a semi gravy consistency, the proportion of water used here is more compared to other rice varieties. Sambar rice can be cooked in less than 30 minutes.

Paella is a Spanish rice dish made using meat, vegetables and seasoning. There are several variations of Paella depending on the ingredients used and this is a very simple and easy to cook Paella made using Chicken meat. You can try this when you wish to try something new. I have already shared this recipe, but this is a more detailed post with step by step photos.

Beetroot is a rich source of antioxidants and nutrients. It lowers high blood pressure and prevents cardio vascular problems. Hence regular use of this vegetable would work wonders to our health. Given below is a very simple recipe that is not only healthy but also delicious.

The authentic paella served in Spain contains an assortment of ingredients. I have given below the recipe of Paella modified  to our taste with only a few basic ingredients. It not only delicious and flavourful but is also very easy to make. You could try this dish when you wish to make something different easily and quickly.
