EGGLESS CHOCOLATE CAKE PASTRY WITH WHIPPED CREAM FROSTING

 

Hi all, welcome back to my blog. Today I am going to share the recipe of Eggless Chocolate pastry that I made recently. This is an ideal cake pastry that you can make for Christmas or New year or for any other party or celebration. This is an Eggless Chocolate pastry and perfect Pastry for Vegetarians or for those who are allergic to eggs.




For this recipe, I first made an Eggless Chocolate cake, then brushed it with sugar syrup, then layered it with whipped cream frosting and decorated with cherries. 

We do not prefer much cream in our cakes, so I have kept the frosting minimal. But the recipe given here is enough for making a well frosted cake. Since I used less cream, I used the remaining cream to make a biscuit pudding. Will be sharing the recipe of that dessert very soon.

So, let's move on to the recipe of making Eggless chocolate pastry at home. Here I have also shared the method of making Chocolate pastry on the stove top without oven. Do check that procedure out, if you do not have an oven.

1 cup = 250 ml

Ingredients required for making Eggless Chocolate pastry

For the chocolate sponge cake

1 cup All purpose flour/ maida
1 tsp baking powder
1/2 tsp baking soda
3 tbsp cocoa powder
3/4 cup powdered sugar
1 cup milk
1 tsp vinegar
1/4 cup oil
1 tsp vanilla essence

Cream
1 cup Amul whipping cream refrigerated for at least 2 hours
1 cup powdered sugar (or to taste)

Sugar syrup
¾ cup water
½ cup powdered sugar

For garnishing

30 gms Chocolate
Cherries

Method

Step 1: Baking the Chocolate Sponge cake

  • First take milk in a bowl, add vinegar and mix. Set aside for about 20 minutes.
  • Meanwhile sieve together All purpose flour, baking powder, baking soda and cocoa powder twice and keep ready. 
  • Preheat oven at 170 degree C for 10 minutes.
  • Grease and line a square baking pan with baking paper and keep ready.
  • To the bowl of milk, add powdered sugar and mix well.
  • Then add oil and vanilla essence and whisk well.. 
  • Next add the flour mix little by little and whisk gently to make a smooth batter without any lumps.
  • Pour this into the square cake pan.
  • Place the cake pan in the middle shelf and bake at 170 degree C with lower rods On for 20 to 25 minutes or till a toothpick comes out clean.
  • Take it out and allow it to cool down completely.

Step 2: Whipping the Cream

  • While the cake is getting cooked in the oven, prepare the cream and sugar syrup. 
  • To prepare cream, take cold Amul cream in a bowl, place another bowl with ice cubes below so that the cream remains chilled.
  • Beat for 2 to 3 minutes using an electric whisk till the cream thickens a bit.
  • Then add powdered sugar and vanilla essence and beat well.
  • Place it in the refrigerator for 5 to 10 minutes. 
  • Then take it out and beat again till it thickens. 
  • Once done place it again in the refrigerator till we are ready to assemble.
Here I have used, Amul Whipping cream. If you are using any other whipping cream, you can reduce sugar and use it as per the instructions given in the packet.

Step 3: Preparing the Sugar syrup

  • Now to prepare sugar syrup, boil water and add powdered sugar. 
  • Let the sugar dissolve completely. Then switch off the flame. Allow it to cool.

Step 4: Chocolate shavings and cherries 

  • Then take a bar of chocolate and cut it into strips using a knife. Refrigerate this till the time you assemble the cake otherwise the chocolate will begin to melt.
  • Wash and wipe dry the cherries and keep ready. You can also chop a few cherries to place it in between layers with cream.

Step 5: Assembling (Final step)

  • Once the cake has cooled down completely, cut cake into 2 layers. 
  • Apply 2 to 3 tbsp of sugar syrup on each layer and keep ready. 
  • Place the first layer, apply cream on top and spread well. Place another layer of the cake. 
  • Then spread cream and garnish with chocolate shavings and cherries. 
  • You can decorate it as per your choice. 
  • Refrigerate the cake for 2 to 3 hours and then cut into small pieces. 
  • Serve.
