Its again time of the year when cakes and cookies are made
in most houses to welcome the New year. In tune with the festive spirit, I am
sharing a very simple and easy recipe of basic vanilla cup cake. You can
customize it according to your choice by adding chocolate chips, or tutti
fruity or jam or even chopped dried fruits and nuts.
Makes: approx 18 cup

Ingredients
2 cups all purpose flour (Maida)
2 tsp baking powder
Pinch of salt
100 gms butter
2 cups milk
2 cups sugar
1 ½ tsp vanilla essence
4 eggs
Method
- Place the butter and eggs outside the refrigerator.
- The eggs, butter and milk should be at room temperature.
- Powder the sugar in a mixer and keep ready.
- Seive together maida, baking powder and salt thrice and keep ready.
- Take butter and powdered sugar in a bowl and mix well to form a smooth paste.
- Break open the eggs in another bowl and beat using an egg beater or an electric beater till frothy.
- Add the egg mix and vanilla essence to the butter- sugar mix and continue beating.
- Add milk and mix well.
- Preheat the oven at 160 degrees Celsius with upper and lower rods on for 10 minutes.
- Add maida-salt-baking powder mix little by little to the batter and fold with a spoon such that there are no lumps.
- Pour this into cup cake moulds or silicon moulds as shown below and fill till they are 3/4th filled.
- Place the moulds in the central rack of the oven and cook at 160 degree Celsius with both upper and lower rods on.
- Cook for 10 to 15 minutes or till a toothpick inserted comes out clean.
- Allow the cup cakes to stay inside the oven for about 5 minutes before taking them out.
- With silicon moulds, the cup cakes come out easily. Nowadays silicon moulds of different sizes are easily available in the market.

ReplyDeleteHi I tried your recipe for chocolate cake and it came out very good for first time. Later I tried cup cakes but batter was too thin. I think milk or eggs quantity was more. Can u please verify
ReplyDeleteThe cake batter has to be thick and not thin. In case your batter is thin, you might have added more milk. In any case you can add some more flour and powdered sugar to thicken the batter.
