JAM CAKE/ EASY TEA CAKE RECIPE WITH JAM







Hi friends, welcome back to my blog, today I am going to share the recipe of easy and delicious Jam Cake. This super soft cake has random patterns of mixed fruit jam and needs no frosting. You can cut and serve Jam Cake with tea or coffee in the evenings or as a snack in your kids' snack box.


Here I have used mixed fruit jam, you can also use mango jam or any other jam of your choice. I have used a 200 ml cup for measuring the ingredients.

Ingredients

1½ cups all purpose flour
1½ tsp baking powder
½ tsp salt
2 eggs
1 tsp vanilla essence
½ cup sugar
30 gms butter melted
¾ cup milk
3 tbsp jam

Method


  • Sieve flour, baking powder and salt twice and keep ready.
  • Beat eggs in a bowl and add sugar. Beat till the sugar dissolves.
  • Next add essence and melted butter and continue beating.
  • Now add the flour mix little by little and fold well. do not beat...
  • Add milk and mix to form a smooth lump free batter. Add half the jam mix and mix roughly.
  • Preheat oven at 170 degrees Celsius for 10 minutes and grease and flour a 6” cake pan.
  • Pour the batter into the cake pan and finally add the remaining jam on top and form random patterns.
  • Place the pan in the middle rack of the oven and bake at 170 degree Celsius for 25 minutes or till a toothpick inserted comes out clean.
  • Allow it to sit in the oven for 5 more minutes after switching the oven off. Take it out, allow it to cool, unmould, cut and serve.


Notes:
  • Instead of mixed fruit jam, you can also use other flavours like pineapple or strawberry.
  • I used a 5" cake tin and a pudding bowl to bake the cakes. You can bake one large cake or pour the batter into cup cake moulds and make Jam Cup cakes using the same recipe.

  7. Can we use oil instead of butter and what quantity??

    1. It is better to use butter in this recipe as you are adding jam. I have not tried this recipe with oil as it might make the batter thin.
